Sunday’z Meal Prepping with Me! 

As today is Sunday, (officially the best day of the week) not only do I organize my life, I like to start the day with Barre and then head to the local markets to get my meals ready for the week.

This is what’s on the menu for this week.

Breakfast #1 – I have onion, tomato and mushrooms chopped and ready to go. This means it takes me less time and I add this to 3 whole eggs. I’ve been fasting overnight, so a healthy nutritious breakfast is key. I sometimes make mini frittatas with the same ingredients, if I know I need to be out the door with early starts.

Breakfast #2 – When I’m feeling a liquid breakfast, I reach for my go to smoothie. Lately I’ve been blending the following;

250 ml homemade coconut milk

1/2 banana

1 cup of spinach leaves (seriously, extra greens with no spinach taste! I always buy organic)

1 scoop of chocolate protein powder

1 tbsp peanut butter

1 tbsp flax seed oil 


Snack #1 – I’ve been feeling mediocre of late with the change of season, so I’ve been buying mandarins for the extra dose of vitamin C. Plus a mix of Brazil nuts and macadamias for the extra dose of fats.


Snack #2 – Chocolate almond protein balls. I love having protein balls on hand, but I hate recipes loaded with dates and dried fruit. Here’s the current recipe, I’m dabbling with inclusive of carbs, fats and protein.

2 scoops of chocolate protein powder

2 tbsp cacao

2 tbsp peanut butter

2 tbsp coconut oil

2 tbsp desiccated coconut

12 dates

1/4 – 1/3 cup of chopped almonds

1/2 cup puffed quinoa

Mix together, add 2 tbsp water to mix. Roll in coconut (extra coconut on hand) and store in the fridge. 


Lunch – I’m a creature of habit and love sticking to the same lunch or dinner for the week and then I mix it up each market shop.

This week I was craving some healthy Mexican and as I’ve been fatigued I’ve added in some brown rice. Add guacamole, grass fed butter, chili (this chili I buy from the health food shop is insanely amazing!!) and grass fed beef. Voila!


Dinner – Currently in the kitchen ready to go, I have zucchini noodles, carrot noodles, cauliflower rice and mashed pumpkin. I’ll add this rainbow lineup to some smoked salmon and chili (in walks that famous chili again), plus some grass fed butter and I’m ready to go.

Food, food, oh glorious food. What would I do without you?
